Old-fashioned Beef Stew

Old-fashioned beef stew is a hearty and comforting dish that has been a classic in many households for generations. It's a simple and wholesome meal that combines tender pieces of beef with an assortment of vegetables and a rich, flavorful broth. Here's a basic recipe for old-fashioned beef stew:

Ingredients:

  • 2 pounds of stewing beef (such as chuck or round), cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 4 carrots, peeled and sliced into thick rounds
  • 4 potatoes, peeled and cut into chunks
  • 2 celery stalks, chopped
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 2 cups frozen peas (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Heat the vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.

  2. Add the cubed beef in batches and brown on all sides. Remove the browned beef and set it aside.

  3. In the same pot, add the chopped onions and minced garlic. Sauté until the onions are translucent.

  4. Return the browned beef to the pot and add the beef broth and red wine (if using). If you prefer a non-alcoholic version, you can substitute the wine with additional beef broth.

  5. Add the carrots, potatoes, and celery to the pot. Season with bay leaves, dried thyme, salt, and black pepper. Stir everything together.

  6. Bring the stew to a boil, then reduce the heat to low, cover, and let it simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through. Stir occasionally.

  7. If using frozen peas, add them to the stew during the last 10-15 minutes of cooking.

  8. Taste the stew and adjust the seasoning with more salt and pepper if needed.

  9. Remove the bay leaves before serving.

  10. Ladle the old-fashioned beef stew into bowls, garnish with fresh chopped parsley if desired, and enjoy with some crusty bread or dinner rolls.

This classic beef stew is perfect for a chilly day and is even better when reheated, as the flavors meld together over time. You can also customize it by adding other vegetables like green beans or mushrooms if you prefer. It's a versatile and timeless recipe that's sure to warm your soul.
