Peking Duck recipes


 Peking Duck is a delicious and iconic Chinese dish known for its crispy skin and tender meat. While traditional Peking Duck recipes can be quite complex and require special equipment, I'll provide a simplified version for you to try at home. Keep in mind that this recipe won't replicate the exact results you'd get at a professional Peking Duck restaurant, but it's a great way to enjoy a homemade version.

Ingredients:

For the duck:

1 whole duck (around 5-6 pounds) 1 tablespoon of honey 1 tablespoon of maltose or corn syrup (you can also use honey as a substitute) 2 tablespoons of vinegar 4 cups of boiling water

For the pancakes:

Chinese pancakes (available at Asian grocery stores) or you can make your own crepe-like pancakes.

For the garnish:

Thinly sliced cucumber Thinly sliced scallions Hoisin sauce or plum sauce


Instructions:

  1. Preparation:

    • Wash the duck thoroughly and remove any excess fat.
    • Use a bike pump or a straw to separate the skin from the meat. Do this carefully by inserting the pump or straw between the skin and the meat, being cautious not to puncture the skin.
    • Combine 1 tablespoon of honey and 1 tablespoon of maltose (or corn syrup) with 2 tablespoons of vinegar in a small bowl.
    • Pour 4 cups of boiling water over the duck. This will help tighten the skin.
  2. Hanging the Duck:

    • Hang the duck in a cool, dry place for 4-6 hours to air-dry. This will help the skin become crispy. You can use a hook or hang it from a cupboard handle.
  3. Roasting the Duck:

    • Preheat your oven to 350°F (175°C).
    • Place the duck on a roasting rack, breast side up.
    • Brush the honey and maltose mixture over the duck. You can repeat this process a few times during cooking.
    • Roast the duck for 1.5 to 2 hours or until the skin is crispy and the meat is fully cooked. You may need to adjust the cooking time based on your duck's size.

  4. Serving:

    • Slice the duck into thin strips, including the crispy skin.
    • Serve the duck with Chinese pancakes, hoisin sauce, cucumber, and scallions. To eat, spread some hoisin sauce on a pancake, add duck slices, cucumber, and scallions, then roll it up like a burrito.
