Tarte Tatin RECIPES

Ingredients:

For the pastry:

  • 1 1/4 cups all-purpose flour

Instructions:

  1. Start by making the pastry dough:

    • In a food processor, combine the flour and salt.
    • Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
    • Slowly add the ice water and continue pulsing until the dough comes together.
    • Form the dough into a disk, wrap it in plastic wrap, and chill it in the refrigerator for at least 30 minutes.

    • In a 10-inch (25 cm) ovenproof skillet, melt the 1/2 cup of butter over medium heat.

  4. Prepare the apples:

    • Peel, core, and quarter the apples.
    • Arrange the apple quarters in a circular pattern in the skillet on top of the caramel.
  5. Roll out the pastry:

    • Roll out the chilled pastry dough on a floured surface to a circle slightly larger than the skillet.
  6. Assemble the Tarte Tatin:

    • Carefully place the pastry over the apples in the skillet, tucking in the edges around the apples.
  7. Bake:

    • Place the skillet in the preheated oven and bake for 25-30 minutes or until the pastry is golden brown and the caramel is bubbling.
  8. Serve:

    • Allow the Tarte Tatin to cool for about 10 minutes, then carefully invert it onto a serving platter. Be careful as the caramel will be hot.
