Tarte Tatin RECIPES

Ingredients:
For the pastry:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed

For the filling:
- 6-8 apples (Granny Smith or other firm varieties)
- 1 cup granulated sugar
- 1/2 cup unsalted butter
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract
Instructions:
Start by making the pastry dough:
- In a food processor, combine the flour and salt.
- Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
- Slowly add the ice water and continue pulsing until the dough comes together.
- Form the dough into a disk, wrap it in plastic wrap, and chill it in the refrigerator for at least 30 minutes.
Preheat your oven to 375°F (190°C).
While the dough is chilling, prepare the caramel and apples:
- In a 10-inch (25 cm) ovenproof skillet, melt the 1/2 cup of butter over medium heat.
- Add the granulated sugar and cook, stirring occasionally, until it turns a deep amber color. Be careful not to burn it; this should take about 10-12 minutes.
- Remove the skillet from heat and stir in the lemon juice and vanilla extract.
Prepare the apples:
- Peel, core, and quarter the apples.
- Arrange the apple quarters in a circular pattern in the skillet on top of the caramel.
Roll out the pastry:
- Roll out the chilled pastry dough on a floured surface to a circle slightly larger than the skillet.
Assemble the Tarte Tatin:
- Carefully place the pastry over the apples in the skillet, tucking in the edges around the apples.
Bake:
- Place the skillet in the preheated oven and bake for 25-30 minutes or until the pastry is golden brown and the caramel is bubbling.
Serve:
- Allow the Tarte Tatin to cool for about 10 minutes, then carefully invert it onto a serving platter. Be careful as the caramel will be hot.
Serve your Tarte Tatin warm, and you can top it with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
