Ceviche is a delicious dish made from fresh raw fish or seafood that's "cooked" in citrus juices, typically lime or lemon juice.   • 1/2 cup chopped fresh cilantro
  • Salt and pepper, to taste
  • Optional: 1 cucumber, peeled, seeded, and diced


Instructions:

  1. In a non-reactive bowl (glass or ceramic), combine the lime and lemon juice.

  2. Add the fish or seafood to the bowl and stir to ensure that all the pieces are coated with the citrus juice. The acid in the juice will "cook" the fish by denaturing the proteins. Let it marinate for about 15-20 minutes for fish and up to 30 minutes for shrimp or scallops. Make sure the fish is submerged in the juice.

  3. While the fish is marinating, prepare the other ingredients.

  4. Drain off most of the citrus juice from the fish. Leaving a little juice will add flavor.

  5. Add the sliced red onion, minced garlic, chopped hot peppers, diced tomatoes, and chopped cilantro to the fish.

  6. Gently toss everything together to combine. Season with salt and pepper to taste.

  7. Optional: Add diced cucumber for extra freshness and crunch.

  8. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.

  9. Serve your ceviche cold, garnished with additional cilantro and some tortilla chips or crackers.
