CABBAGE SOUP

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 1 small head of cabbage, chopped
  • 2 potatoes, peeled and diced
  • 1 can (14 ounces) diced tomatoes
  • 8 cups vegetable or chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 bay leaf
  • Optional: 1 cup green beans, chopped
  • Optional: 1 cup corn kernels
  • Optional: 1 cup diced celery


Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.

  2. Add the sliced carrots and minced garlic to the pot. Cook for a few minutes until the vegetables start to soften.

  3. Add the chopped cabbage and diced potatoes to the pot. Stir well.
