Italian Cream Cake




 Italian Cream Cake is a classic dessert known for its rich flavor and creamy texture. Despite its name, it's not originally from Italy; rather, it is a traditional Southern United States cake. Here's a basic recipe for making Italian Cream Cake:

Ingredients:

For the Cake:

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 5 large eggs, separated
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans or walnuts

For the Cream Cheese Frosting:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Additional chopped pecans or walnuts for garnish (optional)


Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

2. Prepare the Cake Batter:

  • In a large bowl, cream together the butter and sugar until light and fluffy. Add the egg yolks one at a time, beating well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour and baking soda. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined.
  • Fold in the shredded coconut and chopped nuts.

3. Beat Egg Whites:

5. Prepare the Cream Cheese Frosting:

  • In a large bowl, beat together the softened butter, cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

6. Assemble the Cake:

  • Once the cakes are completely cooled, spread a layer of cream cheese frosting between each layer and over the top and sides of the cake.
  • Optional: Garnish the cake with additional chopped nuts.
