Italian Cream Cake
Italian Cream Cake is a classic dessert known for its rich flavor and creamy texture. Despite its name, it's not originally from Italy; rather, it is a traditional Southern United States cake. Here's a basic recipe for making Italian Cream Cake:
Ingredients:
For the Cake:
- 1 cup (2 sticks) unsalted butter, softened
- 2 cups granulated sugar
- 5 large eggs, separated
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 cup buttermilk
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans or walnuts
For the Cream Cheese Frosting:
- 1/2 cup (1 stick) unsalted butter, softened
- 8 oz cream cheese, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- Additional chopped pecans or walnuts for garnish (optional)
Instructions:
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
2. Prepare the Cake Batter:
- In a large bowl, cream together the butter and sugar until light and fluffy. Add the egg yolks one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour and baking soda. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined.
- Fold in the shredded coconut and chopped nuts.
3. Beat Egg Whites:
- In a clean, dry bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the cake batter.
4. Bake the Cake:
- Divide the batter evenly among the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
5. Prepare the Cream Cheese Frosting:
- In a large bowl, beat together the softened butter, cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
6. Assemble the Cake:
- Once the cakes are completely cooled, spread a layer of cream cheese frosting between each layer and over the top and sides of the cake.
- Optional: Garnish the cake with additional chopped nuts.
7. Serve and Enjoy:
Slice and serve the Italian Cream Cake. It's best enjoyed at room temperature.
This cake is delicious and perfect for special occasions or any time you crave a decadent dessert. Enjoy!
