Once the mixture is boiling, add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.
Remove the pan from heat and let it cool for a couple of minutes.
Add the eggs, one at a time, beating well after each addition. The mixture should be smooth and glossy.
Drop tablespoon-sized portions of the dough onto the prepared baking sheet, leaving space between each for expansion.
Bake in the preheated oven for 30-35 minutes or until the puffs are golden brown and sound hollow when tapped.
Remove from the oven and cool completely on a wire rack.
Filling:
In a large bowl, whip the heavy cream until soft peaks form.
Add powdered sugar and vanilla extract. Continue whipping until stiff peaks form.
Assembly:
Once the cream puffs are completely cooled, cut them in half horizontally.
Spoon or pipe the whipped cream onto the bottom half of each puff.
Place the top half of the puff on the whipped cream, creating a sandwich.
Dust the tops with powdered sugar for a finishing touch.
