Parmesan Chicken Stuffed Peppers Recipe


Parmesan Chicken Stuffed Peppers are a delicious and flavorful dish that combines the goodness of chicken, parmesan cheese, and bell peppers. Here's a simple recipe for you to try:

Ingredients:

4 large bell peppers (red, green, or yellow) 1 pound boneless, skinless chicken breasts, diced into small pieces 1 cup cooked quinoa or rice 1 cup marinara sauce 1 cup shredded mozzarella cheese 1/2 cup grated Parmesan cheese 1/2 cup chopped onion 2 cloves garlic, minced 1 teaspoon Italian seasoning (or a blend of dried oregano, basil, and thyme) Salt and pepper to taste 2 tablespoons olive oil Fresh basil leaves for garnish (optional)


Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. Cut the tops off the bell peppers and remove the seeds and membranes. You can also trim the bottoms slightly to help them stand upright.

  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté for a few minutes until they become soft and translucent.

  4. Add the diced chicken to the skillet and cook until it's no longer pink and has started to brown. Season with salt, pepper, and Italian seasoning.

  5. Stir in the cooked quinoa or rice and half of the marinara sauce. Cook for a few minutes to combine the flavors.

  6. Mix in half of the mozzarella cheese and half of the grated Parmesan cheese. Stir until the cheeses are melted and the filling is well combined.

  7. Carefully stuff each bell pepper with the chicken and cheese mixture, pressing it down slightly to pack it in. You may have some filling left over.

  8. Place the stuffed peppers in a baking dish. Pour the remaining marinara sauce over the top of each pepper.

  9. Cover the baking dish with aluminum foil and bake in the preheated oven for about 30-35 minutes, or until the peppers are tender.

  10. Remove the foil and sprinkle the remaining mozzarella and Parmesan cheeses on top of each stuffed pepper.

  11. Return the dish to the oven, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the peppers are soft and slightly charred.

  12. Garnish with fresh basil leaves if desired.
