STRAWBERRY CHEESECAKE BARS RECIPES
Certainly! Here's a recipe for strawberry cheesecake bars:
Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
- 2 (8-ounce) packages cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
For the Strawberry Topping:
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1/4 cup water
Instructions:
Preheat your oven to 325°F (160°C) and line a 9x9-inch (23x23 cm) square baking pan with parchment paper, leaving an overhang on two sides for easy removal.
In a medium mixing bowl, combine the graham cracker crumbs, 1/4 cup of granulated sugar, and melted butter. Mix until the crumbs are evenly moistened.
Press the crumb mixture into the bottom of the prepared baking pan to form an even crust. You can use the back of a spoon or the bottom of a glass to help pack it down.
In a separate mixing bowl, beat the softened cream cheese and 1/2 cup of granulated sugar until smooth and creamy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Pour the cream cheese mixture over the graham cracker crust and spread it evenly.
Bake in the preheated oven for 35-40 minutes, or until the edges are set, and the center is slightly jiggly.
While the cheesecake is baking, make the strawberry topping. In a small saucepan, combine the sliced strawberries, 1/4 cup of granulated sugar, cornstarch, and water. Cook over medium heat, stirring constantly until the mixture thickens and the strawberries release their juices, about 5-7 minutes. Remove from heat and let it cool.
Once the cheesecake is done baking, remove it from the oven and let it cool to room temperature.
Once cooled, spread the strawberry topping over the cheesecake.
Refrigerate the bars for at least 4 hours or overnight to allow the cheesecake to set.
When ready to serve, use the parchment paper overhang to lift the cheesecake out of the pan. Cut it into bars, and you're ready to enjoy your delicious strawberry cheesecake bars!
Feel free to garnish with additional fresh strawberries or a dollop of whipped cream if desired. Enjoy!
