  • 1-inch ginger
  • 2 tablespoons white vinegar

Other Ingredients:

  • 2 tablespoons vegetable oil
  • 2 large tomatoes, chopped
  • 1 cup water
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

1. Marinate the Beef:

  • In a large bowl, combine all the marinade ingredients. Add the beef cubes and ensure they are well coated. Cover and refrigerate for at least 2-4 hours, or overnight for best results.

2. Prepare the Vindaloo Paste:

  • In a blender, combine all the vindaloo paste ingredients and blend into a smooth paste.

3. Cook the Beef:

  • Heat oil in a large, deep pan or Dutch oven over medium heat. Add the marinated beef along with the marinade and cook until the meat is browned on all sides.

4. Add the Vindaloo Paste:

  • Stir in the vindaloo paste and cook for a couple of minutes, allowing the spices to release their flavors.

5. Add Tomatoes and Water:

  • Add the chopped tomatoes and cook until they soften. Pour in the water, season with salt, and bring the mixture to a boil.

6. Simmer:

  • Reduce the heat to low, cover the pan, and let it simmer for 1.5 to 2 hours or until the beef is tender and the flavors have melded together. Stir occasionally and add more water if needed.

7. Garnish and Serve:

  • Once the beef is tender, adjust the seasoning if necessary. Garnish with fresh coriander leaves.

8. Serve:

  • Serve the Beef Vindaloo hot with steamed rice, naan, or crusty bread.
