Big Boy's Fresh Strawberry Pie Recipe
Ingredients:
For the Pie Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Filling:
- 4 cups fresh strawberries, hulled and halved (keep a few whole berries for garnish)
- 1 cup granulated sugar
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 cup water
- 1 (3-ounce) package strawberry-flavored gelatin
- Whipped cream for topping
Instructions:
For the Pie Crust:
Preheat Oven: Preheat your oven to 375°F (190°C).
Combine Ingredients: In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated.
Press into Pie Pan: Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie pan to form the crust.
Bake: Bake the crust in the preheated oven for 8-10 minutes, or until it's set. Allow it to cool completely.
For the Filling:
Prepare Strawberries: Wash and hull the strawberries. Cut them in half, keeping a few whole berries aside for garnish.
Make Gelatin Mixture: In a small bowl, mix together the sugar, cornstarch, and salt. In a saucepan, combine the sugar mixture with water. Cook over medium heat, stirring constantly until the mixture thickens and becomes clear.
Add Gelatin: Remove the saucepan from heat, and stir in the strawberry gelatin until fully dissolved. Allow the mixture to cool slightly.
Assemble Pie: Arrange the halved strawberries in the cooled pie crust. Pour the gelatin mixture over the strawberries, ensuring they are well-coated.
Chill: Refrigerate the pie for at least 4 hours or until the gelatin is set.
Garnish and Serve: Before serving, garnish the top with whipped cream and the reserved whole strawberries.
