Ingredients:

For the Cake:

  • 1 and 3/4 cups all-purpose flour
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

For the Filling:

  • 1 can (21 oz) cherry pie filling

For the Whipped Cream:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

  • Chocolate shavings or grated chocolate
  • Maraschino cherries




Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cocoa powder, and salt. Set aside.

  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.

  5. Pour the batter into the prepared loaf pan and spread it evenly.
